What a lovely suprise to see that the Duke and Duchess of Sussex chose an Independent Hackney-based baker to create their wedding cake. Wildly different to the traditional tiered fruitcakes which often weren't eaten at Royal weddings but taken home in commemorative tins. For this stunning creation. the taste was given equal importance to the beautiful design and was eaten there and then at the wedding reception. The cake artist? A girl after my own heart... Claire Ptak of Violet Bakery in London.
She created non-tiered sponge cakes made from lemons from the Amalfi coast and elderflower syrup made at The Queen’s residence in Sandringham from the estate’s own elderflower trees. The cakes were filled and covered with Swiss meringue buttercream icing and ornamental fresh flowers, mainly in season peonies and roses.
